Owner Georges Perrier, who also now holds the title of chef de cuisine, has involved himself in every aspect of Le Bec-Fin's transformation. In addition to conducting regular meetings with architects and designers, the chef has brought in new talent - executive chef Daniel Stern and sommelier Gregory Castells.
