A.P. Stump's Chop House is an "American Style Chop House" featuring corn-fed American beef, fresh seafood and their signature classics, creatively prepared by Executive Chef Jim Stump.
An example of their signature appetizer would be the Johnny Cakes, two corn meal pancakes made with black forest ham, layered with fresh butter poached Maine lobster, basil mascarpone cheese, American caviar, corn buerre blanc, drizzle of maple syrup. Main Plate example: Prime, 190z. Cowboy Steak, Bone in Ribeye, rubbed with porcini mushroom powder, red chilis and garlic, served with creamed spinace and potato pine-nut fritters; Kona Kompachi, furikake rubbed, wood oven roasted, sushi rice, fresh bean sprouts, daikon sprouts and baby bok choy, cucumber yogurt coulis.
The historic San Jose building has been transformed into a masterpiece of dining design that blends traditional elegance with contemporary character. Conferred tin ceilings, crown moldings and rich classical woodwork create an architectural backdrop reminiscent of an old European building. Textual fabrics, hand wrought fixture and vibrant custom artwork contribute to a contemporary vitality that reflects the historic San Jose. The two-tiered space features a bar, casual bistro dining area, and a fine dining area overlooking the patio. |
